Nothing beats the wholesome nutrition that Khichri provides. Khichri is a simple food item made from rice and lentils (3:1 ratio), pressure cooked and usually had with ghee and curd. However, to make it vegan, I chose to add some bhujia/ namkeen to it to make it tangier.
